  • 75g (3oz) margarine
  • 675g (1½ lb) dessert apples, peeled cored and grated
  • 75g (3oz) soft brown sugar
  • 275 (10oz) wholemeal flour
  • 1 x 5ml spoon (1 teaspoon) bicarbonate of soda
  • 1 x 5ml spoon (1 teaspoon) cinnamon
  • 1 x 2.5ml spoon (1/2 teaspoon) nutmeg
  • 1 x 2.5ml spoon (1/2 teaspoon) ground mace
  • 100g (4oz) chopped walnuts
  • 50g (2oz) raisins
  • 175g (6oz) dates, chopped
  • 3 x 15ml spoons (3 tablespoons) milk


  • 25g (1oz) chopped walnuts
  • 1 x 2.5ml spoon (1/2 teaspoon) cinnamon

Method of preparation

Place all cake ingredients in a bowl and beat with a wooden spoon until well mixed. Turn mixture into a greased 1kg (2lb) loaf tin. Combine the topping ingredients and sprinkle over the cake. Bake at 160°C, 325°F, Gas No.3 for 1¼ - 1½ hours. Leave in tin for 15 minutes, then transfer to a wire rack to cool.
